I used to make that kind of French toast too… until I learned the secret: use only egg yolks. No egg whites, no eggy taste—just rich, custardy, perfectly crisp-edged French toast.

This recipe also uses a bit of flour (yep, flour!) to give the custard mixture body and create that soft-crisp exterior that browns beautifully in butter. It’s simple, made with pantry staples, and it doesn’t require fancy bread. Regular sandwich bread works perfectly.

INGREDIENTS

  • 4 slices soft sandwich bread (white or wheat)

  • 2 large egg yolks

  • 1/2 cup whole milk (or half and half for richness)

  • 1 ½ tbsp all-purpose flour

  • 1 ½ tsp sugar (optional, but helps with browning)

  • ½ tsp cinnamon

  • Pinch of nutmeg (optional but lovely)

  • 1/2 tsp vanilla extract

  • Pinch of salt

  • Butter, for cooking and serving

  • Syrup, for servinga plate of stacked french toast with butter

HOW TO MAKE THE BEST FRENCH TOAST

  1. Warm your milk slightly in the microwave. It helps dissolve the flour and spices smoothly.

  2. Whisk together the yolks, warm milk, flour, cinnamon, nutmeg, sugar, salt, and vanilla in a shallow dish until mostly smooth. A few small flour clumps are fine.

  3. Dip the bread: Quickly dip both sides of each slice into the custard. If the bread is very soft, don’t soak—just a quick in-and-out. For stale bread, let it sit a couple of seconds per side.

  4. Cook it: Heat butter in a nonstick skillet over medium. Add soaked slices and cook until golden brown and slightly crisp, about 3–4 minutes per side.

  5. Serve warm with more butter, your favorite syrup, and optional toppings like berries or powdered sugar.


TIPS FOR PERFECT FRENCH TOAST

  • Only use egg yolks: The whites are what give that rubbery egg flavor. Yolks = rich, custardy perfection.

  • Flour thickens the custard and gives a crisp exterior.

  • Fresh soft bread? Dip quickly. Stale or thick bread? Let it soak briefly.

  • Don’t crowd the pan. Give each slice breathing room so it browns instead of steaming.


FAQ

Can I use almond milk or oat milk?
Yes, but the custard may be thinner. Add an extra pinch of flour to help it stick.

What’s the best bread to use?
Any kind! Soft sandwich bread, brioche, challah, or even Texas toast. Just avoid super flimsy bread.

Can I freeze this?
Absolutely. Let the cooked slices cool, then freeze flat. Reheat in a toaster oven or skillet.

The best french toast recipe with warm undertones of vanilla, cinnamon and a hint of nutmeg, fluffy, browned and toasted with soft creamy custard-like insides. This best french toast recipe is perfect for breakfast, brunch or dessert. Delicious french toast that is easy to make, always fluffy and never eggy or soggy.  This is the technique that I use to get foolproof golden toasted french toast every time.

Ingredients
  

  • 2/3 cup milk warm heat milk in the microwave for about 20 seconds
  • 2 tbsp melted butter for the custard
  • 3 egg yolks
  • 1 tsp cinnamon
  • 2 small pinches nutmeg
  • 2 tbsp sugar
  • 1/4 plus 1/16 tsp salt
  • 1 tbsp vanilla extra
  • 1/4 cup flour
  • 7 slices sandwich bread I used wheat bread
  • 1-2 tbsp unsalted butter for the skillet

Instructions
 

  • To make the french toast. To a large bowl add the sugar and eggs and whisk well until combined. Add the melted butter, warmed milk and the rest of the ingredients. Mix well until most of the clumps from the cinnamon and flour clumps are gone. The warmed milk will help prevent the flour and cinnamon from clumping. 
  • Set the oven to warm. In a nonstick skillet over medium heat, add 1 tablespoon of butter. Dip the bread into the custard mixture*See notes. Place the bread in the hot skillet. Cook each side for about 3-4 minutes or until golden and browned. Place french toast on baking sheet then place it in the oven to keep warm until the rest of the french toast is done.
  • Add your choice of fruit, powdered sugar or syrup. Serve this best french toast with bacon and eggs. 

Notes

 For fresh bread: place up to two slices of bread in the french toast batter and immediately flip it over.  Flip the bread over and repeat the same steps.
For stale bread: place up to two slices of bread in the french toast batter and let it soak for a few seconds. Flip the bread over and repeat the same steps. 
Do not let the bread sit in the mixture too long or it will fall apart or get too soggy.
