Best French Toast Recipe
Fluffy, golden, custardy French toast that’s never soggy or eggy. This easy recipe uses just yolks and a touch of flour for perfect results every time.

If you’ve ever bitten into a slice of French toast and thought, “why does this taste like scrambled eggs?”, you’re not alone. I used to make that kind of French toast too… until I learned the secret: use only egg yolks. No egg whites, no eggy taste—just rich, custardy, perfectly crisp-edged French toast.
This recipe also uses a bit of flour (yep, flour!) to give the custard mixture body and create that soft-crisp exterior that browns beautifully in butter. It’s simple, made with pantry staples, and it doesn’t require fancy bread. Regular sandwich bread works perfectly.
I keep mine simple—just butter and syrup—but feel free to dress it up with berries or powdered sugar. And if you’re making breakfast for a crowd, serve it with a Tequila Sunrise mocktail for the ultimate weekend brunch.
WHY YOU’LL LOVE THIS FRENCH TOAST
-
No eggy taste – thanks to just yolks in the custard
-
Lightly crisp on the outside, soft on the inside
-
Easy pantry ingredients
-
Kid-approved and freezer-friendly
-
Works with any bread you have on hand

INGREDIENTS
-
4 slices soft sandwich bread (white or wheat)
-
2 large egg yolks
-
1/2 cup whole milk (or half and half for richness)
-
1 ½ tbsp all-purpose flour
-
1 ½ tsp sugar (optional, but helps with browning)
-
½ tsp cinnamon
-
Pinch of nutmeg (optional but lovely)
-
1/2 tsp vanilla extract
-
Pinch of salt
-
Butter, for cooking and serving
-
Syrup, for serving

HOW TO MAKE THE BEST FRENCH TOAST
-
Warm your milk slightly in the microwave. It helps dissolve the flour and spices smoothly.
-
Whisk together the yolks, warm milk, flour, cinnamon, nutmeg, sugar, salt, and vanilla in a shallow dish until mostly smooth. A few small flour clumps are fine.
-
Dip the bread: Quickly dip both sides of each slice into the custard. If the bread is very soft, don’t soak—just a quick in-and-out. For stale bread, let it sit a couple of seconds per side.
-
Cook it: Heat butter in a nonstick skillet over medium. Add soaked slices and cook until golden brown and slightly crisp, about 3–4 minutes per side.
-
Serve warm with more butter, your favorite syrup, and optional toppings like berries or powdered sugar.
TIPS FOR PERFECT FRENCH TOAST
-
Only use egg yolks: The whites are what give that rubbery egg flavor. Yolks = rich, custardy perfection.
-
Flour thickens the custard and gives a crisp exterior.
-
Fresh soft bread? Dip quickly. Stale or thick bread? Let it soak briefly.
-
Don’t crowd the pan. Give each slice breathing room so it browns instead of steaming.
FAQ
Can I use almond milk or oat milk?
Yes, but the custard may be thinner. Add an extra pinch of flour to help it stick.
What’s the best bread to use?
Any kind! Soft sandwich bread, brioche, challah, or even Texas toast. Just avoid super flimsy bread.
Can I freeze this?
Absolutely. Let the cooked slices cool, then freeze flat. Reheat in a toaster oven or skillet.
What type of pan to use for french toast
I use a nonstick pan or griddle to make french toast and a billion other things. I totally love this griddle. So easy to clean!

I have been making french toast the wrong way -It seems like lol. Where has this recipe been all my life? Adding the flour helps with the texture. It was not eggy, it was soft but yet crispy around the edges. I did add a little more cinnamon and nutmeg; but not as much sugar as requested. I use maple syrup, and I think it’s sweet enough. My husband tried it and the only thing he could say was “wow”. Though it’snot my recipe, I was very proud! Thanks for sharing this recipe, April!
