Chrissy Teigen’s Sweet Chili and Mustard Glazed Salmon Fillets

You know how Oprah feels about bread right? By the way, have you seen those Oprah Winfrey bread memes? Hilarious!! Well, I feel the same exact way about salmon. IIIIIII LOVE salmon! I love salmon! I love it by itself, in pasta or as a burger. If I could eat it every day, I would. It’s just so darn GOOD! I don’t’ feel bad about it either. Salmon is actually a good splurge food because it’s healthy! It’s perfect if you need Omega 3, Vitamin D or more protein.
Who else LOVES salmon? If you answered yes then I know you will love this recipe! Even if you don’t like salmon I highly believe that you will enjoy this. If you’re on the fence about salmon, give it a chance. You’ll love it. Salmon for you, salmon for you, salmon for everyone! I get so excited when I can eat food that’s good for me and ridiculously delicious! Not to mention, EASY!
I love Chrissy Teigen’s cookbook “Cravings”. Beautiful pictures for each recipe. I want to make everything. Her recipes are straight forward and simple. My type of cookbook! I think the next recipe I will try is her sweet and salty coconut rice. Doesn’t that sound delicious! I also want to make her Pot pie soup with crust crackers. It sounds and looks like the type of comfort food I’d want to curl up to while sporting my favorite big comfy sweater.

In my previous post, I mentioned that I would post my homemade Thai Chili Sauce. Just to keep you updated, I will be posting it in separate blog post.

Ingredients:Â
- 4 (6 ounces ) skin-on center cut salmon fillets
- Salt and pepper for taste
- 2/3 cup of Thai sweet chili sauce
- 2 tbs sambal oelek (optional)
- 2 tbs large grain mustard (I used dijonaise mustard)
Directions:
Position rack 4-6 inches from the heating element and preheat the broiler.
Season salmon all over with salt and pepper. In a small bowl stir together the Thai sweet chili sauce, sambal oelek, and mustard.
Pour the mixture into a large cast-iron skillet. Set skillet over medium-high heat until the mixture boils.
Lay the salmon skin side up, in the sauce. Cook the salmon until it turns pale pink about 2 minutes, then move the skillet to the oven and broil
until the skin gets crispy about 3-4 minutes.
Add 1/4 cup of water to the skillet and cook over high heat, stirring and scraping until the sauce thickens. Pour the sauce from the skillet onto the salmon. Note***( I skipped this step and just spooned the sauce from the skillet but it’s in Chrissy’s recipe so it’s optional) Serve immediately.

I am right there with you – SALMON is the BEST! Bread I could give up forever but definitely not salmon – it’s also my favorite! And I NEED a recipe for that Thai sweet chili sauce : ))
