Anyone who knows me, know that I love soup. I can eat soup everyday, all year around too. I think it’s possible to turn almost any meal into soup. For instance, I am working on incorporating sweet potatoes and collard greens with meat into a savory spicy soup.
I’m still working on it. Once I get it right I will post the recipe. In the meantime, let’s discuss this Lasagna Soup. In this wholesome soup there are, broken lasagna sheets, tomato sauce, ground beef (you can use ground sausage or turkey if you like) onions, garlic, oregano, parsley, paprika, crushed red pepper, a bit of sugar and cayenne pepper (I’m a spicy kinda girl), seasonings, Parmesan, heavy cream, homemade ricotta cheese and I cant forget whole mozzarella cheese. Speaking of ricotta cheese, I totally forgot I didn’t have any and everyone knows lasagna without ricotta just ain’t lasagna so I figured why not just make it, so I did just that.
People, ricotta cheese is the most easiest recipe out there. So don’t let the look of it intimidate you. You can use whole milk and the other ingredient is vinegar or a citric acid. You can have ricotta cheese done in about 5 minutes! Next, all you have to do is set some time aside to let it drain but that’s a quick process too. However, I do think a step by step tutorial would make the directions easier for you so I posted the link to the recipe below.
When you make this dish, make sure you have some type of bread to go with it. I totally forgot buy some and I wasn’t even gonna attempt bread, sista was too hungry for all that.

2 tbs lemon juice
pinch of salt
