- 1 cup rice vinegar
- 1 cup water
- 1 1/2 cup sugar
- 2 tbs fresh Ginger optional
- 3 tsp garlic
- 1 cup Thai chili peppers rinsed and stems removed
- salt for taste
- 3 tsp ketchup plus 1 tbsp
- 1/2 cup plus an additional 1 tbsp of the homemade sweet chili sauce you made
- 4 tbs of corn flour
To make the chili sauce, add the first 7 ingredients and only 2 tsp of the ketchup to a blender and mix well. Reserve the rest of the ketchup for later.
Add the sauce to a large cast iron pan over medium-high heat until it boils. Once the sauce comes a boil, simmer. Remember to stir frequently to prevent the sauce from burning. Add the rest of the ketchup and stir.
Remove about 1/2 cup plus 2 tbsp of the chili sauce from the skillet and place it into a bowl. Add the corn flour to the bowl and whisk well until very smooth and no clumps. Be careful not to spill any of the hot sauce on you.
Return the chili sauce to a boil for 2 minutes then simmer stirring occasionally for 5-10 minutes until you get your desired thickness. Let the sauce cool to room temperature then pour into a jar with an air tight lid. **see notes**
FYI. As the chili sauce cools down it will thicken even more. If the sauce is too thick thin it out with a bit of water.
The longer you cook this sauce the thicker it will become. To achieve the bright vibrant red color, I like to use a good amount of chili peppers and a bit of ketchup.
