– Over medium high heat, add the olive oil. Once the oil is hot add the ground beef. Cook until browned. Drain the fat. – Next, saute the peppers. Add the onions. Cook until they're translucent.
– Add the tomato paste and fire roasted tomatoes. Cook stirring. Add minced garlic and cook until fragrant. – Next add the ground beef back to the pot along with other ingredients. Stir and let it come to a boil.
– Remove the lid and add the heavy whipping cream and the parmesan cheese. Serve with shredded mozzarella or stir it into the bowl of soup.
