Taco Spaghetti

My taco spaghetti is filled with all of my favorite ingredients: Barilla pasta, taco seasoning, ground beef, jalapeno, chipotle, adobo sauce, onions, salsa, black beans, corn, grape tomatoes and fresh herbs. This quick and easy pasta is full of flavor and not too spicy, which makes it kid friendly and perfect for busy weeknights!

Cheese sauce

  • 1 cup of your favorite cheese I used Parmesan cheese
  • 3 tbsp butter
  • 1 cup heavy whipping cream

For the Pasta

  • 8 oz Barilla spaghetti or your choice
  • .05 lb ground beef
  • 1/4 cup onion diced
  • 1 cup grape tomatoes halved
  • 1 cup sweet corn
  • 1 cup drained black beans
  • 1 chipotle in adobo sauce chopped plus 2 tsp of the adobo sauce
  • 1/2 cup salsa
  • 1/2 tbsp jalapeno finely diced
  • 3 tsp chili powder
  • 1/4 cup taco seasoning
  • 1 tsp garlic powder
  • 1 tortilla chips crushed optional
  • salt and pepper for taste


  1. Add a handful of tortilla chips and place them in the food processor and process until it's the size of breadcrumbs. Alternatively, you could crush them with your hands for bigger crumbs that delicious too. Set to the side.
  2. Cook the spaghetti according to the directions on the box. Cook the ground beef and onions together in a skillet over medium high heat.Cook until brown. Drain, leaving at least a tablespoon of the fat.
  3. Add to the skillet with the beef, the taco seasonings, chili powder, onion and garlic powder then add the vegetables (only add half of the grape tomatoes), oregano, chipotle and the adobo sauce, salsa, jalapeno and the black beans. Add salt and pepper for taste if needed.
  4. Do not add all of the tomatoes. Reserve half of the tomatoes for later. If you have your own homemade taco seasoning feel free to use that too.
  5. Add all the cheese sauce ingredients together with the ground beef, vegetables and beans. Mix it carefully. The sauce will began to thicken up. Once it thickens up, add the pasta and the reserved fresh grape tomatoes and toss to coat. Serve immediately
