– Preheat oven to 325 degrees Fahrenheit. Add the whole tomatoes to a food processor and puree. Heat 1 tbsp vegetable oil in a large pan. Add onions and cook until translucent. Set the onions to the side. Add the garlic and cook stirring until fragrant. Remove and set to the side.
– Add 2 tbsp vegetable oil to the pan. Once the pan is hot add the sausages and cook each side for 3-4 minutes or until golden brown. Remove the sausages from the pan and set to the side. Add the tomato sauce, red peppers and whole pureed tomatoes and water to the pan. Add the seasonings adjust seasoning to your preference if needed. Add the sausages back to the pan and spoon the sauce over the sausage. Place the pan with a lid in the oven for 50-60 minutes or until done.
– Cut each baguette in half then cut lengthwise on the top of the roll ¾ way through the roll and place on a baking sheet. Add sauce to both sides of the bread. Place a sausage inside each baguette then top with cheese. Broil the cheese until melted about two minutes. Remove from the oven and top with basil (optional).
