Ingredients
1tbsp vegetable oil
1/2lbground beef
1medium onion diced
1red onion finely diced
4tsp minced garlicminced finely
2red bell pepperdiced
3tbsp tomato paste
14.5 ozfire roasted diced tomatoes
5ozpepperoni I used turkey pepperoni
4 1/2cups water
2 1/2tsp each of garlic and onion powder
2tsp parsley flakes
1 1/2tsp dry oregano
1 1/4tsp crushed red peppers
1tsp sugar
3tsp grated parmesan cheese
2 tbspunsalted butter
1/4cup heavy whipping cream
salt and pepper for taste
shredded mozzarella cheese
Instructions
Over medium high heat, add the olive oil. Once the oil is hot add the ground beef. Cook until browned. Drain the fat.
Next, saute the peppers for about 5 minutes. Add the onions. Cook until they're translucent.
Add the tomato paste and fire roasted tomatoes. Cook stirring occasionally for about 5 minutes.Add minced garlic and cook until fragrant.
Next add the ground beef back to the pot along with the pepperoni, unsalted butter, beef base, water, Italian seasoning, parsley, oregano, crushed red pepper, a bit of sugar, onion and garlic powder. Stir and let it come to a boil then simmer for about 15 minutes.
Remove the lid and add the heavy whipping cream and the parmesan cheese. Add more parmesan if you like. Serve with shredded mozzarella or stir it into the bowl of soup.
Notes
Season with salt and pepper to your taste however, keep in mind that the beef base, parmesan and pepperoni already contains salt, so make sure to season with salt generously.
