Sweet Chili Brussel Sprouts

Sweet chili brussels sprouts. Yes, brussels sprouts - they can be good if you cook them right. All you need are a few ingredients. This sweet and spicy side dish has been an absolute hit with my family, and I'm pretty sure it will cure you of your skepticism on brussels sprouts.

Ingredients

  • 1 tbsp extra virgin olive oil
  • 1/4 tsp garlic powder
  • 1/4 tsp crushed red pepper
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup sweet chili sauce use less sauce if you'd like but just remember, depending on your taste, you may need season with a tad bit more salt.
  • 1 tsp rice vinegar
  • 1/4 tsp chili garlic paste
  • 1/2 tbsp sesame seeds optional

Instructions

  • In a bowl, mix the cleaned, dried and cut brussels sprouts with oil, salt, pepper, garlic and crushed red peppers. Place them evenly on the lined baking sheet  and place them in the oven for about 15 minutes.
  •  While the brussels sprouts are baking make the sweet chili sauce. To a small bowl, add the sweet chili sauce, rice vinegar, and chili garlic paste. Stir to combine.
  • Flip them over and bake for 5-8 minutes. Every oven is different so keep an eye on them to make sure they don’t burn.
  • Brush the brussels sprouts all over with the sweet chili sauce, reserving 3 tbsp for later. Set oven to low broil. Return to the oven for another 5-8 minutes.  Because of the sugars from the sweet chili sauce, keep an eye on the brussels sprouts to make sure they aren’t burning.
  • Heat up the remaining sauce in the microwave. Add the roasted brussels sprouts to a serving bowl and pour the remaining sweet chili sauce over the brussels sprouts and gently mix to combine. Serve immediately.
