2tbspMazola Corn Oil more for the steaksplus more for the steaks
2tsp salt
1tsp pepper
1tbsp thymeplus an additional 1/4 tsp
1/4tsp nutmegplus an additional 1/8 tsp
1/16 tsp clovesplus an additional 1/8 tsp
1/4tsp allspice
1/4cup dark brown sugaradd less or more for taste
2 1/2tbsp lime juice
2tbssoy sauce
5scotch bonnet peppersor habanero (for milder flavor use less peppers) cut into large slices
1/2cup red onions chopped
1/2cup scallionschopped
Mango salsa
1mango diced
2tsp cilantrochopped finely
1tbsp green onionssliced finely
1tbspred onionsminced finely
Juice of one lime
1/4cup yellow bell pepperdiced
1tbspshredded carrotsdiced very finely
1jalapeno pepperscotch bonnet, habanero works too. Minced finely
Instructions
Cut the steak into four equal pieces.
Add all of the jerk steak ingredients (minus the green onions) for the marinade to a food processor. Process for about 10 seconds.
Put the steaks into a zip bag then add the marinade. Add the green onions on top of the steaks. Remove the air before you seal it shut. Massage the steaks. Make sure they’re all well-coated in the marinade. Marinate for a couple of hours or up to 24 hours in the refrigerator. Remove steaks from bag and pat steaks very dry.
In a cast iron skillet large enough for the steaks, heat up the pan until it's very hot. Add the steaks. Do not move the steak around at all. Sear both sides for about 3-4 minutes each.
Place steaks to rest on a plate and cover lightly with foil for about 10 minutes. Cut thin slices across the grain. Serve immediately. Fyi, if you like your steak well done, just cook it longer.
To make the mango salsa
Add the mangoes, cilantro, carrots, bell peppers, onions, green peppers, salt and pepper to a bowl and mix well. Chill for a couple hours. Serve immediately.
Notes
Jerk steak marinade: I didn't add a lot of allspice and cloves because too much seems to overpower the rest of the flavors. Season the marinade to your taste preference. Marinate for a couple of hours or up to 24 hours in the refrigerator. For maximum flavor it's best to marinade the steaks for 24 hours. Mango Salsa: It's suggested that you double maybe even triple this salsa if you are serving it for a few people. It's best to season this salsa to your taste preference. No mangoes? You can use pineapples instead. If you love cilantro add more. If you're not crazy about it, add less or you can try using parsley or basil. If you don't like it too spicy add less peppers or just leave them out. Do the same with the rest of the ingredients. Enjoy! Jerk Tacos: You can easily transform this recipe into tacos.
