Prepless 20 Minute Tortellini Bacon Carbonara

Ingredients

  • 12 oz tortellini
  • 2 cups heavy whipping cream
  • 1/2 cup Swanson® Natural Goodness Chicken Broth 14.5 oz Can
  • 9 slices bacon I used fully cooked bacon from Walmart
  • 1 1/2 cups grated Parmesan cheese
  • salt and pepper for taste
  • parsley for garnishment (optional)

Instructions

  • Cook the tortellini according to package directions. Drain set to the side.   
  • Cook the fully cooked bacon over medium high heat until crispy, about 3 minutes Only drain the fat if you are not using fully cooked bacon. Remove bacon and set to the side.
  • To the same skillet over medium heat, add the heavy whipping cream and parmesan cheese. Mix until the cheese has melted. Then add the broth. Mix well.
  • Add the tortellini and bacon to the skillet and combine until coated with parmesan sauce. Season with salt and pepper as needed. Garnish with parsley (optional)

Notes

Shortcuts:
The fully cooked bacon will take about 3 mins to crisp up. You can use regular turkey or beef bacon, however it will take a bit longer to cook and there will be more fat leftover. Make sure you drain off the fat.
