Must Try Cream Cheese Banana Bread W/ Video

This easy and moist cream cheese banana bread with tangy cream cheese filling is the best quick bread recipe ever!  Just 2 bananas are needed. The bread is moist light and flavorful thanks to the bananas and sour cream. It’s a wonderful way to use up those ripe bananas. It’s one classic recipe you’ll want to make ALL the time.

CREAM CHEESE BANANA BREAD 

Cream cheese banana bread is one of my favorite quick bread recipes ever! Talk about scarfing down your dessert. This loaf is ultra moist, smooth and buttery in texture. It will stay moist for days too!

The cream cheese in this banana bread takes regular banana bread waaaay over the top. I don’t think I’ll ever eat basic banana bread ever again! If it doesn’t have cream cheese in it, I don’t want it! Just kidding I love a basic banana bread too!

I updated this cream cheese banana bread recipe because it was long overdue, plus I’ve been craving it for the longest. I also added a video on how to make it because ya know visuals are always a plus.

Ingredients you’ll need…

Bananas: Use very ripe bananas. The more ripe the bananas, the bigger the banana flavor. The bananas I used had a lot of brown spots. You only need two average size bananas. If your bananas are leaking, it’s time to toss them in the trash. There are other way to determine if your bananas have gone bad. Read more about it in this handy guide. 

Eggs: Always use room temperature eggs. Here’s a quick way to warm them up…place them in a bowl and run hot water over them.Let them sit in the hot water for a few minutes. Another option, remove the eggs from the fridge 30 minutes before you start the recipe. 

Butter: Use unsalted melted butter. If you only have salted butter feel free to use it. Just eliminate the salt step.

Vanilla extract: I use a tablespoon plus 1/8 tsp of vanilla extract in the batter for lots of flavor. Trust me on this. It will taste Amazing!

Baking soda – is a leavening agent, It  adds lift when it comes in contact with liquid and an acid. The acid used in this recipe is sour cream. 

Baking powder – Baking powder adds lift when it comes in contact with moisture. It contains baking soda and sometimes cornstarch too. These days most baking powder you see is double acting. If you use double acting baking soda, you want to bake your goods right away. This is why I added the steps for the cream cheese filling first. Once the batter is mixed up you can add the cream cheese and bake immediately. 

All-purpose flour: I always use unbleached flour to make this cream cheese banana bread. I haven’t tried it with all-purpose but I don’t see why it wouldn’t work in this recipe. 

White Sugar: I always use white granulated sugar. This bread is actually perfect since it isn’t overly sweet. I haven’t tested this recipe with more sugar. The sugar amount in this make the flavor of this bread moist and absolutely incredible.

Sour Cream:  The sour cream add moisture and it also makes the bread light, flavorful and so very moist. Most banana bread recipes dry out fast but not this one! It will stay moist for a long time

Salt: Every time you add something sweet you want to add some salt. This helps to balance out the flavors. 

Powdered sugar: This recipe uses powdered sugar instead of granulated sugar because no 1 powdered sugar dissolves faster than granulated sugar and it gives the cream cheese a smooth consistency. 

Cream cheese:  I love the tangy flavor of the cream cheese in this banana bread. For full cream cheese flavor you want to use a full 8 oz of cream cheese. If you use anything less than that, it will be lacking in flavor. 

Cream Cheese Filling: 

In a mixing bowl, Add the cream cheese, powdered sugar and egg. Beat until smooth.

How to make the Cream Cheese Swirl 

I won’t go into too much details on how to make it, since the cream cheese banana bread video below shows just how I do it.

Here’s how to make that pretty swirl action. Add half of the batter first, then dollops of the cream cheese. Add the remaining batter. Dollop with the remaining cream cheese. Insert your butter knife halfway through the batter and swirl the mixture together. Swirl a few times.

How to make Cream Banana Bread 

Make the banana bread batter:

In a mixing bowl, with a fork mash the bananas until smooth. Make sure there are no big lumps of bananas.

Add in the, butter, baking soda, baking powder, vanilla extract and egg. Mix well until smooth. 

Mix in the flour and sugar until all the ingredients are combined. 

Make the cream cheese swirl. 

Pour half of the batter into a nicely greased loaf pan. Top the batter with half of the cream cheese mixture.

Use a spoon to drop dollops of the cream cheese.  Pour the remaining batter over the cream cheese mixture. Add dollops of the remaining cream cheese. Bake for 45-60 minutes or until toothpick comes out clean when inserted.

If you notice your bread is browning too fast, cover with aluminum foil.

The cream cheese swirl filling

  • 8 oz Cream cheese
  • 1 large egg
  • 1/4 cup powdered sugar

The banana bread batter

  • 2 bananas
  • 3 tbsp melted butter
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tbsp vanilla extract
  • 1 large egg
  • 1 cup all-purpose flour unbleached
  • 1/2 cup sugar
  • 1/4 cup sour cream
  • tiny pinch of salt

How to make the cream cheese filling

  • Preheat oven to 350 degrees Fahrenheit. Grease the loaf pan very well. In a mixing bowl, Add the cream cheese, powdered sugar and egg. Beat until smooth.

How to make the banana bread batter

  • In a mixing bowl, mash the bananas with a fork until smooth.
  • Add in the butter, baking soda, baking powder, vanilla extract, and egg. Mix well until smooth.
  • Mix in the flour, sugar, and salt until all the ingredients are combined. Add the sour cream. Mix until combined.

Make the cream cheese swirl

  • Pour half of the banana bread batter into a nicely greased loaf pan. Top the batter with half of the cream cheese mixture (use a spoon to drop dollops of the cream cheese). 
  • Pour the remaining batter over the cream cheese mixture. Add dollops of the remaining cream cheese. Bake for 45-60 minutes or until toothpick comes out clean when inserted.
  • If you notice your bread is browning too fast, cover with aluminum foil.

Pro tips
 
Baking the bread: If you notice the bread is browning too fast, tent the loaf pan with a sheet of foil draped over. The bread is done when a toothpick comes out clean when inserted. Baking times will vary. 
 
 
Cool and store:
Cool the banana bread for a few minutes in the pan, then remove from pan and transfer to a cooling rack to cool completely.
Since this bread has cream cheese, it's best to store in the refrigerator or for longer storage, place in a resealable freezer bag or airtight container and place it into the refrigerator. 
Let the bread come to room temperature by taking the bread out of the refrigerator an hours or so before serving.
