Waiting for summer like…..
This tropical drink is just as pretty as it is delicious.
With peaches, coconut and lemons, it’s a great recipe to save for this coming summer.
I live in the DC area. I couldn’t believe yesterday’s weather. It was so warm and sunny! I loved it. I did a little shopping and saw a lot of people rushing winter. In other words, people were wearing shorts, flip flops, tank tops, summer dresses. You name it, they wore it. I don’t blame them though. I’m glad the warm weather isn’t over just yet. Today is not going to be as hot as yesterday’s weather, but still warm enough for me.
Warm weather means warm weather drinks. A nice cold drink that is. That’s why I’m sharing with you, my peaches and coconut cream lemonade.
I call it coconut cream because it’s not your typical lemonade.
I got the inspiration for this recipe from Brazilian lemonade recipes I’ve seen online. Brazilian lemonade is a Brazilian drink consisting of whole limes. That’s right WHOLE limes which are blended with water and sweetened condensed milk. I’ve made Brazilian Lemonade in the past but the recipes I’ve tried are very very tart. I don’t mind a bit tart but I dislike too tart drinks.
For this recipe, I used only the juice of lemons, cream of coconut, sugar and water. I let it chill for a couples in the fridge then served it with ice.
You might ask , what is Cream of coconut? Well, it’s basically a thick sweet creamy liquid made from fresh coconut and it’s usually added to mixed drinks.
You can find cream of coconut in the alcoholic mixer aisle. I purchased a 22 oz size. Please don’t get cream of coconut confused with coconut milk. The two are not the same. Also, I should let you know that cream of coconut doesn’t have any alcohol in it, so the kids can enjoy this drink too!

- Juice of two lemons
- 3 cups peach nectar juice
- 1/4 cup plus 2tbs cream of coconut
- 2 1/4 cups of water
- sugar (I added 1/3 cup)
- Add all the ingredients to a blender and mix well. Pour the lemonade into a pitcher and chill for 3 hours. Serve with ice.
