I’ve never eaten rhubarb, let alone cook with it. I knew I wanted to try it out, so one day I decided to go for it and buy it. I ended up buying a bit too much rhubarb but I put it to good use.

Okay, I was super excited to make this Delicious Rhubarb Coffee Cake with Lemon filling. This Rhubarb Coffee Cake with Lemon Filling is adapted from Patty Pinner’s, “Sweet Mornings: 125 Sweet and Savory Breakfast and Brunch recipes”. Before I talk about this Rhubarb Coffee Cake with Lemon Filling, I have to talk about this amazing cookbook, which I absolutely loooove by the way!

Pattie Pinner provides you with 125 southern recipes that have been passed down from generations to generations. The recipes are tested so you won’t waste your time with her recipes. If you are in to sweets then this is the book for you. If you aren’t in to sweets, then there are savory recipes as well. I love how each recipes provides readers with comical memorable stories of her family, friends and neighbors. Her stories will lure you in. They are so beautifully written
Page after page each recipe kept getting better and better. I want to try mostly all of her recipes. Some of the recipes I bookmarked to try include, Aunt Zaida’s Almond Coffee Ring, Aunt Bulah’s Brown Sugar Hazelnut Biscuits (yum), Lemon Coconut Bread, Lemon Drizzle Coffee Cake, Big Mama’s Chicken and Waffles,Old Timey Brunch Chicken Salad, Pan fried Eggs and Bacon Sandwiches, Morning Steaks and Cheesy Scrambled Eggs, Fried Green Tomatoes. Whew! Don’t they all sound scrumptious! I definitely recommend this cookbook.
This is one of those cookbooks that you will use over and over again. Many of Patty Pinner’s recipes accompany a photo of the finished dish but not all, but I didn’t mind that at all. I was so happy with my purchase of this book, that I had to tell a fellow blogger friend about it. She ended up buying it and loves it too!
Now back to this Rhubarb Coffee Cake with Lemon Filling. The original rhubarb recipe in Pattie’s cookbook doesn’t have lemon filling. FYI, I got the idea to add lemon filling from one of Patty Pinner’s other recipes. I figured why not use the lemon filling in her rhubarb cake recipe. I’m glad I added it because it came so good!
I don’t know about you but I love a lot of crumb topping. I you’re like me, then make sure to double! This cake is just perfect I’ll tell ya. Tender, moist, lightly sweet, crunchy and tart!
