I love playing around with pancake batter. you can practically add everything but the kitchen sink in the batter. I had muffins which I needed get rid off and thought maybe I can throw them in pancake batter. I don’t even know what prompted me to add muffins to my pancake batter. Maybe it was my dislike for chocolate muffins plus my cravings for pancakes that made me do it, but whatever it was, I’m glad I did because they were amazing!!
Imagine biting into fluffy light buttermilk pancakes with chocolaty notes from the muffins throughout then finish it all off with a tall cold glass of milk. Seriously good stuff! Ask my kids. These chocolate muffins even had tiny chocolate chips!! Double chocolatey flavor y’all, however the chocolate was not overpowering which was perfect for me. These leftover chocolate muffins pancake disappeared within minutes. Have fun with it. Choose whatever muffins you prefer.
Fyi, make sure to use big chunks of muffins. Don’t worry if there are crumbs. Throw those crumbs in the batter too and then, if you like, set some crumbs aside for garnishments. The tiny chocolate crumbs will make pretty chocolate speckles all over the pancakes as you can see in the photos. Make sure to gently fold the muffin chunks etc into the batter and don’t over mix.
I imagine that this recipe would work great with leftover cake, brownies, donuts etc. Donuts sound amazing too! I have to remind myself to try them out. I will make sure to update you! Hope you enjoy this super easy leftover muffins recipe!
